Graham Cracker Cake
1 box graham crackers rolled fine
1 cup of sugar
2 eggs
2 teaspoons of baking powder
1 1/2 cups of scant milk
1 teaspoon of vanilla
2 tablespoons of butter
1 cup of Whipping cream
Cream the butter and sugar together, add the egg yolks beaten with sugar, then slowly add the milk. Alternately with milk, mix in the crackers ground fine, and mixed before with baking powder; than add vanilla, and the last fold in stiffly beaten with sugar egg whites. Bake in very thin layers in moderate oven at around 350 F. When ready to serve, fill with slightly sweetened whipped cream and cover the top layer with the same layer of the cake.
If preferred, some lemon juice maybe added to the whipping cream.
