Flounder en Casserole

 Flounder en Casserole 

1 pound of spinach

3 big fillets of flounder

1 tablespoon of butter 

1 tablespoon of flour

1 cup of milk

salt

pepper

Cook spinach as usual and fill with them the bottom of buttered casserole. Brown  the flounder in butter and when half cooked, place on top of the  spinach. Make 1/2 to 2 cups of white sauce. using 1 tablespoon of butter and 1 tablespoon of flour, to a cup of milk. Season well, and pour over top of the fish. A little store cheese may be grated over the top or buttered bread crumbs used. Bake in a moderate oven  for about thirty minutes.
