Pickled String Beans

 Pickled String Beans 

5 quarts of beans

2 tablespoons salt

1 qt of vinegar

1 cup sugar

\Wash and string 5 quarts of beans, break or leave whole, as best will fit jars. Boil in salted water until soft, but not quite done, drain well. Boil 1 qt of vinegar, 1 cup sugar, and 2 tablespoons salt for 15 minutes with 1 tablespoon each of celery seed. and mustard seed. spices in a muslin bag. Add the beans. and cook 10 minutes longer. Bottle and seal while hot.
