Spinach with Cream Sauce
1 lb spinach
1 tablespoon salt
1/4 cup water
2 teaspoons flour
2 teaspoons butter
Wash the spinach in several waters, so that no sand remains in it. Put the spinach into the kettle with the water and cook from ten to twelve minutes, or just until tender. Drain off and save the water. Melt the butter, add the flour to it stirring in the water of the spinach until smooth.. Add the spinach water gradually, stirring constantly. Bring it to the boil, remove from fire. Chop the spinach. For the younger children mash the spinach through a sieve. Pour the sauce over the spinach just before serving.
