Oldfashioned dessert of 1908- Ambrosia. The Grand Americana of the Grand American Cuisine. Traditionally served for Halloween or other festivities.
Ambrosia
1 pint of mashed chestnuts
1 cup of white granulated sugar
2-3 oranges
1 pint of heavy rich cream
Soak your chestnuts for a night in a salted water. Boil them in a salted water and make a puree with a half cup of sugar when they cool down. Slice the oranges into nice rinds. Lay the oranges on a nice serving platter. Put a generous layer of the boiled and mashed chestnut puree the of a fruit dish, sprinkle generously with sugar border on the of iced oranges around. Fill the center with heavy sweetened whipped cream. Chill in the fridge. Serve cold.
