Angel Food Cake
Angel Food Cake and Snow cake type cakes are especially popular in the state of Iowa. Californians prefer Angel Food Cake to the Snow cake more.
9 eggs
1 1/2 cups of white granulated sugar
1 cup of swansdown cake flour
1/2 teaspoon of cream of tartar
1 level teaspoon of baking powder(Calumet or Glabber Girl)
1 pinch of salt or to taste
11/2 teaspoon of almond flavoring extract
Take the eggs and separate whites from yolks. Chill the egg whites in the fridge for two- three hours. Beat the whites of nine eggs with 1 and 1/2 cups of white granulated sugar. Do not forget to add the pinch of salt into the egg whites before whipping them with sugar. Sift 1 cup of swansdown cake flour with 1/2 teaspoon of cream of tartar and 1 level teaspoon of baking powder. Add to the flour 11/ 2 teaspoon of almond flavoring extract. Fold the whipped egg whites into the flour. Bake the cake for 25 minutes in moderately hot oven.
