BRAZIL NUT BARS
Classic American candy sold before WW2 in American pharmacies. This is the original recipe.
To make this recipe at home you will need :
3 pounds of white granulated sugar (brand Confectioners A)
4 pounds of Brazilian nuts
1 pint of fresh cold water
11/2 teaspoonful of cream-of-tartar
You begin making this candy by putting all the ingredients into the cast iron kettle and boiling the sugar, the water and the cream-of-tartar to 330 degrees. When the sugar begins to caramelize, you need to take it off the stove and mix in the ground nuts.When mass is starting to cool down, you need pour it off onto the greased slab. Turn it over and mix with scraper until the batch is partly cool, and then spread the candy mass out between two iron bars placed five inches apart, it should be making a long strip. Now you may cut the candies into the bars about one and quarter inches wide. Wrap your candies into the wax paper and store in your favorite tin jar,
