Corn Pan Cakes
The American style pancakes- corn pancakes- tortilla. This tortilla recipe is from South Dakota. Eggs and corn grains are added into the pancake dough- which is not the standard tortilla recipe of Southern California.
For this tortilla you will need
1 cup of cooked corn grains- 1 can of sweet corn will be fine as well
2 eggs
1 cup of fresh sweet milk
2 cups of corn flour, or else called corn meal
2 teaspoons of baking powder - Calumet or Glabber Girl
1/2 teaspoon of kosher salt
Sift the corn flour with baking powder and salt. Add the eggs and the milk. Mix with a spoon and bake on your cast iron skillet exactly the same way as any other pancakes.
