Date Cream Pie
Traditional New England pie for the New Years Eve, served in our American families since 1908.
1 cup of pitted dates-Dromedary dates work fine
1 cup of white granulated sugar
1 cup of heavy sweet cream
Bake a single shell crust of a pie in a deep pie plate or a tin, in the slow oven, which is better, pricking it to prevent blistering or rising. To each eight-inch diameter pie plate allow one and one half of cupfuls of chopped and pitted or stoned dromedary dates. You need to soak the dates for several hours in cold water, drain them, chop them and they should be mixed with sufficient sweetening flavored with whipped cream to fill your pie crust. Cover the top of the dates with a meringue, browned slightly for 20 mins in the owen, and when it gets cold, dot the top of the pie with the bits of the bright color fruit jelly. This is a delicious pie for the New Year's Eve.
