FRUIT GLACES - CLASSICS OF THE AMERICAN PHARMACIES
The Classic Grand Americana recipe. The popular American ice-cream and family dessert was sold in all the pharmacies of the United States of America in 1918 all year. The original recipe of the State of California, the Pomona city, loved in New England, Boston, and New York pharmacies. The sundae was sold in the pharmacies for 15 cents of 12 ounces serving glass.
For this original American classic ice-cream- slowly churned egg- sundae dessert of the beginning of the last century you will need:
3 quarts of heavy sweet double cream
1/2 pound of white granulated sugar
2 ounces of bleached pistachio nut meats
2 ounces of candied French cherries
2 ounces of candied chimois
2 ounces of candied French apricots
Beat the heavy cream and melt the sugar in the cream, then put into the water bath or double boiler until it cooks slightly and put into the freezer. Chop or ground2 ounces blanched pistachios with 2 ounces of candied French cherries, add to the blender 2 ounces of candied French apricots and mix into the blender 2 ounces of candied chimois. Chop the nuts and fruits into the small dice - should be quite coarse and not too fine, and stir them into the cream. Beat lightly, mold into the personal well buttered molds and put into the freezer again.
