Graham Gems

 Graham Gems 

1 cup of  Graham crackers or 

1 cup of  all purpose wheat flour

1/4 cup of white granulated sugar

1 teaspoon of  salt or to taste

1 cup of fresh sweet milk

1 egg

3 tablespoons of melted butter

5 teaspoons of baking powder- Calumet works the best

Take 1 cup  of  Graham crackers grinded to dust, or 1 cup of all purpose wheat flour cup flour. Add  1 /4 cup of white granulated sugar, mix in  1 teaspoon of  salt;Add to the dough 1 cup of fresh sweet  milk, 1 well beaen egg,  fold in 3 tablespoons  of sweet unsalted melted butter and 5 teaspoons of baking powder. Our family uses CALUMET since 1922.  

Traditionally the dough is always going this way- first you  mix and sift together the  flour, sugar and the  salt. Then you  add the milk gradually and fold in the  egg, well beaten, and mix in  the melted butter. Put the cakes into the  buttered gem pans and  bake them for about  twenty five minutes
