Rice Pudding
1 cup of rice
3 cups of boiling water
1 cup of white granulated sugar
2 cups of fresh sweet milk
2 eggs
1 cup of chopped seedless raisins
Flavoring and spices as desired
Wash the rice in cold water and soak for three four hours or the whole night. Boil the rice for twenty minutes- proportions of the rice to the water should be one cup of rice to three cups of water. Soak the raisins washed in cold water for the night as you soaked the rice. Dredge the raisins and chop them. Add the milk, two beaten eggs, sugar and raisins into the rice and bake the pudding in a medium hot owen for 45 minutes. Add the butter onto the top and serve with the whipping cream, or milk. Makes a nice evening meal for Friday supper or the Saturday night.
