Silver Custard
3 eggs
2 tablespoonfuls of cold fresh milk
2 tablespoons of white granulated sugar
a pinch of kosher salt
1 pint of hot sweet milk
1/2 teaspoonful of essence lemon flavo- lemon extract or lime extract will do
2 squares of the black chocolate of a good quality- Baker's works fine
Take whites of three eggs slightly beaten and add into the beaten egg whites two table spoonfuls of cold fresh sweet milk and two tablespoons of white granulated sugar and few grains of coarse kosher salt.Into this you pour onto one pint of hot fresh milk add into the milk one half of teaspoon of the essence of the lemon. Pour this into cocotte forms and bake in a small deep pudding dish set in a pan of hot water until firm twenty or thirty minutes. Cook in double boiler or if preferred, it will be the same result. This gorgeous custard may be served with a chocolate sauce which you make by adding two squares of dissolved unsweetened chocolate to the above soft custard. Serve this custard- both - custard and chocolate sauce,- ice cold.
