Spinach

 Spinach 

2 quarts of spinach

1 lemon

1/2 teaspoons of kosher

a splash of apple cider vinegar

1 stick unsalted sweet butter

 Wash 2 quarts of fresh spinach thoroughly in several waters finally pouring over warm water to remove any possible sand and grit- as spinach is grown in manure. Place the spinach into the   kettle and add a little salt but no additional water(only to cover to the sides) and cook your greens gently for twenty minutes, lifting it occasionally so that the spinach will not burn or stick to the pot. Now, when your spinach is really sofr,  add melted butter and 1/2 teaspoon of kosher salt and pepper and sever the spinach with the juice of one lemon. Some prefer to serve the spinach with vinegar but it is coming to be known that vinegar acts upon the stomach with as much evil effects as alcohol.This is a very nice hot salad for your dinner, loved by my Puritan relatives in North Dakota.
