For the Salad rolls  you will need

2 cups  of sweet fresh milk lukewarm

1 compressed yeast cake

1 teaspoon  of salt -Kosher works the best

3 tablespoons  of white granulated sugar

2 tablespoons of sweet fresh unsalted melted butter

5 cups of sifted Gold Medal all purpose Flour

(Level measures)

Pour the lukewarm milk into the mixing bowl, and dissolve yeast cake in  the same milk. Then add salt, sugar, butter, and flour. Mix well till smooth, cover with the cheesecloth, put into the warm place and allow to rise to double  of its volume.
Then knead the dough and allow to rise once more for thirty minutes. Then pull off  the bits of dough, fold and knead them into rolls about 12 inch in thickness, and 3 1/2 inches in length pointed. Place on buttered pan one inch apart each other, and  brush each roll with melted butter and let it rise for one hour again.  Bake  from twelve to fifteen minutes. When baked brush the rolls again with melted butter.
