Baked Hominy Grits
1 cup hominy grits
2 cups milk
2 cups water
2 eggs
2 tablespoons cream
1 tablespoon butter
1 teaspoon salt
Boil the corn grits in milk for 8 minutes,. You may boil them as well and water. Add the salt to the boiling hominy, and when cooked quite dry, remove the grits from the fire, and let them cool just a little. Add into the grits the beaten yolks of two eggs, and mix the cereal thoroughly, then fold into the hominy the stiffly beaten whites of the eggs. Add the heavy cream and melted butter the last. Bake until brown, about thirty minutes in a moderate oven.
