Boiled Salad Dressing
1/2 teaspoon salt
1/4 cup lemon juice
1 egg beaten
1 level teaspoon sugar
1 cup milk or cream
1/2 tablespoons butter
1 tablespoon cornstarch
Mix all the dry ingredients, add beaten egg with milk, slowly stirring to keep smooth. Add lemon juice quickly, butter last, and cook in double boiler until it thickens.Stir gently until right consistency. Remove and pour into bowl. Some may like a little more sugar. This is a simple dressing which the children may eat. Menu II.
