Farina Dumplings
2 scant cups of farina
4 scant cups of milk
1 tablespoon of water mixed with 1/2 teaspoon of salt
3 to 4 tablespoons of butter
1 cup of flour
A little pinch of grated nutmeg
3 eggs
Put butter and milk and water into the double boiler, when it is hot, slowly add farina, and keep it stirring constantly to keep it smooth. Cook it until gets thick. Remove from the stove and cool down. This may be done early in the morning. When ready to make dumplings, add the the eggs well beaten,then flour to hold the dough together lightly and a pinch salt; a few gratings of nutmeg add greatly to the flavor. Drop by tablespoons into gently boiling salted water, and boil gently for five minutes. These are very light and nourishing festive dumplings. Serve them with the chicken fricassee in the middle of a large white platter, and make a border of the farina dumplings. Sprinkle whole dish with very finely chopped parsley.
SERVED WITH CHICKEN FRICASSEE.
