Cauliflower and Rice
1 head of the cauliflower
1/2 cup of rice
1 egg yolk
1/3 cup grated cheese
Cream sauce
Parsley
Take a fine head of cauliflower with a rim of green around it. Soak in cold water for an hour and wash it clean. Cook in boiling salted water until tender, 20 to 30 minutes. (If a piece of stale roll is added to the water and cauliflower is cooked uncovered there will be little odor. )
Boil 1/2 cup of rice taking care to have it flaky. Serve cauliflower on large platter with border of rice. Make a good cream sauce, add to it 1/3 cup grated cheese and 1 egg yolk, beaten thoroughly, and pour over cauliflower. Sprinkle rice with chopped parsley. See Menu IV
