Cauliflower and Rice
1 head of the cauliflower
1/2 cup of rice
1 egg yolk
1/3 cup grated cheese
Cream sauce
Parsley
Take a fine head of cauliflower with a rim of green around it. Soak this cauliflower in cold salted water for an hour and wash it clean. The worms in the cauliflower get out from it in the cold salty water. Put a two full teaspoons of salt into cold water, before you soak the cauliflower or any other kind of cabbage. Cook the cauliflower in boiling salted water until tender,- for 20 to 30 minutes. (If a piece of stale roll is added to the water and cauliflower is cooked uncovered there will be little odor. THE STALE BREAD ABSORBS ALL THE UNWANTED ODOR IN THE KITCHEN)
Boil 1/2 cup of rice taking care to have it flaky, but not sticky. Serve the whole cauliflower on large platter with border of rice.
Make a good cream sauce for this dish.
TO MAKE A GOOD CREAM SAUCE FOR THE RICE AND CAULIFLOWER YOU NEED TO
take 1 cup of hot milk,
add to it 1/3 cup grated cheese
and 1 egg yolk, beaten thoroughly,
This sauce is gorgeous when it is poured over cauliflower. Sprinkle rice with fresh and finely chopped parsley.
