Cranberry Relish
1 lb of fresh cranberries
2 cups of sugar
2 medium oranges
Wash your cranberries and dry them in colander. To avoid the bitterness of the skin of the berries, we scald them with the hot boiling water.Grind your cranberries in the blender or the food chopper using the finest knife of your food chopper. Grate the yellow of the orange peel with the beets grater into the cranberries, and add the juice of the two fresh oranges. Mix the cranberries thoroughly. and set the relish into a cool place for twenty four hours. They are delicious as a cocktail. or with chicken or lamb as a relish or as a dessert. This is traditional way we prepare our cranberry relish for Thanksgiving Dinner and for the Christmas Eve. Works well with the Halloween celebrations as well.
