Banana Maple Tapioca Pudding
2 eggs
1 teaspoon of vanilla
1/ 2 cup of 1 minute tapioca
1 quart of milk
Pulp of 3 ripe bananas
3/4 cup of maple syrup
1 cup of Whipped cream
1 pinch of salt
Scald the sweet milk. Add into this milk on package of 1 minute tapioca, sweeten with maple syrup and add the salt, and cook on the slow fire for 15 minutes, stirring frequently. Pour the small amount of mixture slowly over the slightly beaten egg yolks, while stirring vigorously. Return the tapioca to th stove and cook it on a slow fire until the mixture thickens like custard. Remove the pudding from the fire, and add banana pulp which has been pressed through a sieve. Add vanilla and fold into it the stiffly beaten egg whites. Chill your pudding in the molds and serve it either plain, or with the whipped cream. This pudding as well may be served warm,if preferred.

THOUGH USUALLY WE LOVE TO SERVE OUR TAPIOCA PUDDING ON THE WINTER MONTHS- ESPECIALLY JANUARY AND FEBRUARY.

THE TAPIOCA PUDDING WITH THE FRESH BANANA PULP, SERVED WITH THE MAPLE SYRUP WAS CONSIDERED AS THE SAFE AND SCROMPTUOUS ALL YEAR ROUND DISH, SUITABLE AND ALLOWED FOR THE LITTLE CHILDREN AND TODDLERS, IF THE HEAVY SPICE, LIKE THE BLACK PEPPER, WAS AVOIDED.
