Green Peas
2 lbs of peas
1 pinch of salt or to taste
1 tea spoon of sugar
1 tablespoon of butter
Shell 2 lbs of peas, and just cover with boiling salted water. Add one tea spoon of sugar. Cook until tender from 15 to 20 minutes, uncovered.The water should be almost evaporated.. Add 1 tablespoon of butter. Cover, shake gently until butter has melted. Peas cooked this way are of the nice green color and have a wonderful flavor.
