Onion
2 Cloves

Salt
Soak kidney in salted cold water for an hour. Take the core out of the kidney, and cut it into rather small pieces. Put these in a saucepan with a quart of cold water. Add an onion stuck with one or two cloves, and a little salt.. Simmer very gently for about an hour and a half .Twenty minutes before serving, stir in a light cream sauce, made of flour, butter, and a little of the liquor from the kidneys. Boil gently together for a few minutes. Menu X
