Kolkannon An Old Irish Dish
6 potatoes
2 onions
3 small parsnips
1/4 small head of cabbage
1/2 cups boiling water
2 tablespoons butter
Salt to taste
Wash, peel and slice the potatoes, onions, and chop the cabbage. Place the vegetables into the kettle in this order- first layer of potato, then the layer of the onions and then the layer of the cabbage. Place the vegetables in alternate layers very tightly, and then add the boiling water to the kettlle, and cook them until tender, and can be mashed to a cream. Add the hot milk and butter to the top and sprinkle with a coarse salt. Serve very hot. This dish is delicious when served with the beef steak.
