Kolkannon An Old Irish Dish
6 potatoes
2 onions
3 small parsnips
1/4 small head of cabbage
1/2 cups boiling water
2 tablespoons butter
Salt to taste
Peel and slice potatoes onions and cabbage. Place in kettle in alternate layers tightly, and add boiling water, and cook until tender, and mash to a cream. Add hot milk butter and salt. Serve very hot. This dish is delicious served with beef steak See Menu VII
