Salmon with Egg Sauce and Mashed Potatoes
12 potatoes
3 tablespoons of butter
salt
pepper
1/2 cup of milk
2 cans of salmon in oil or brine
3 hard boiled eggs
This dish is a favorite with the boys and is quickly and easily prepared. Boil and mash potatoes season with salt pepper, plenty of butter and a little milk. Turn onto a platter and shape into a mound with a hollow in the center Into this hollow put canned salmon which has been which has heated and which the and bones been removed .With this serve cream sauce into which have stirred three hard boiled eggs, chopped fine.
