Baked Onions
6-8 medium size onions
1 pinch of salt or to taste
1 pinch of black pepper or to taste
1/ 2 cup of fresh unsalted butter
Wash the medium size onions, but first pare them and put them into a deep saucepan with slightly salted water. Boil the onions until nearly tender - 10-15 minutes. Turn off the water, pour it out and let the onions dry well. Roll each onion into a piece of buttered paper or waxed paper, twist the paper it at the top to keep it in place like in a handkerchief, place into the deep baking dish, and bake each onion in a slow oven for one hour or until tender. When done, turn the fire off and and let them cool down. Remove the paper from the cold onion and slightly brown it in the skillet or in the oven season well with salt pepper and a little butter.
