Fruit Cake FOR THANKSGIVING
Traditional American Fruit Cake of Thanksgiving Day. As well served on Christmas Day.
1/2 pound of butter
3 cups of white sugar
6 eggs
2 cups of sour cream
7 cups of flour
1 teaspoon of baking soda
1/2 teaspoon of grated nutmeg
1/2 teaspoon of mace
1 pound of currants- best working are the black currants
1 pound sultana raisins
1/2 pound of citron lemon peel
1/2 teaspoon vanilla extract
1/2 teaspoon of salt
6 eggs
Mix one half pound of melted butter with three 3 cups of white sugar, beaten well with 6 eggs. Add 2 cupfuls of sour cream and 1 teaspoon of baking soda . Slowly mix in 7 cups of flour, add the grated nutmeg, 1/2 teaspoon of powdered mace, 1 pound of dry black currants, 1 pound of sultana raisins, and 11 /2 pound of chopped citron peel lemon. Do no forget 1/2 of teaspoonful of vanilla extract and a pinch of salt. Cream all the ingredients- the butter and sugar together add gradually fold in the yolks of the eggs well beaten, the baking soda should be mixed with the sifted flour and then the sour cream. Add the grated rind and strained lemon juice of 1 lemon. Put the dough into a deep large baking dish and bake until well done.Put the white icin with a white frosting and decorate the cake with nut meats.
