Squash Pie
Traditional festive Thanksgiving Dinner dish of our Puritan families. As well served on Christmas Day.
4 cups of chopped pumpkin
1 cup of white sugar
3 eggs
1 quart of fresh sweet milk
1 teaspoon of ground cinnamon
1 pinch of mace
1 pinch of nutmeg
1 shell of the pastry
Choppped about 3-4 cups of fresh pumpkin, to make sufficient to make 2 cups when stewed. When you have them nicely soft, turn the fire off and let it cool down a bit. When slightly cold add to your pumpkins 1 cup of white sugar beaten with 3 eggs. Fold them gradually into the pumpkin, slowly add 1 quart of sweet milk, slowly mix in 1 teaspoon of ground cinnamon, add a pinch mace and a pinch of ground nutmeg. Line a pastry shell into very deep pie pan and fill the pastry shell with the custard and bake until well set.
