Potato Fancy
1 cup of mashed potatoes
1 cup of warm milk
1 tablespoon of butter
2 eggs
1 pinch of pepper
1 pinch salt
Beat 1 cup of mashed potatoes to a soft creamy mass with 1 cup of warm milk, and a tablespoon of butter. Have ready 2 eggs whipped light, and add to the cream also a pinch of pepper and salt. Turn into a warmed and buttered pudding dish, set in a quick oven, and bake covered for twenty minutes; then let it brown and serve at once.
