Salad Dressing
This is the traditional American salad dressing, usually served with the festive salads, especially for Thanksgiving Day and Christmas Eve.
1 teaspoon of salt or to taste
1 tablespoon of sugar or to taste
11/2 tablespoon of flour
1/2 teaspoon of mustard - GULDEN mustard works fine, however, the Yellow mustard you will need a good teaspoon
1/4 of cup of the mild vinegar- the best which is working- the apple cider vinegar
1/2 cup of sweet milk
1/2 cup of water
2 eggs
1 teaspoon of onion juice
Mix the sugar, salt, flour, mustard together in a bowl, fold in slowly the beaten eggs and onion juice and slowly pour in the milk. Put into the double boiler and add the vinegar slowly. Cook the sauce in a double boiler until it starts getting thick, while stirring constantly. Remove from the fire, strain through the cheesecloth from the lumps and cool down. This is traditional sauce for the boiled or baked vegetables, another variant of the boiled salad dressing- just with mustard- loved in Southern California.
