SUGARED ALMONDS
1 cup of sugar
1/4cup of water
2 cups almonds
A novel way to treat almonds is suggested by a mother whose daughter always expects to find these tempting nuts in a box from home It is a French method of blanching them with a little sugar. The almonds are first blanched in the ordinary way and thoroughly dried. Then boil a cup of sugar with a quarter cup of water. till it spins a thread and throw in the nuts. Simmer them in this mixture occasionally stir ring slowly, but watch closely. Soon they turn a faint yellowish brown. at which time. instantly remove the sauce pan from the fire and stir until the syrup recrystallizes as sugar , and forms an irregular coating on the nuts.
