Baked Cranberries

 Baked Cranberries 

11/2 pounds of fresh cranberries

1 pound of white granulated sugar

 This is a traditional Christmas desert of our Puritan side families from the New England

Scald your cranberries with the boiling water to take off the bitterness of the skin of the berries. Drain them and dredge with a  tablespoon of cornstarch(if preferred). Otherwise arrange the cranberries in a deep cast iron baking pan in a layer- on the top- sprinkle a good layer of white sugar. Thank again put the layer of the cranberries and arrange in baking dish the alternate layers of berries with 1 pound granulated sugar. You will need to soak the layer of berries with the water- so to prevent the berries from burning- it takes time to master your own baking pan. Bake in a slow heat oven for approximately  1 hour. Do not stir the berries while baking.
