Hubbard Squash
Hubbard squash is a winter squash, famous for its nutty and sweet flavor. Hubbard squash is traditionally served in our New England families for Christmas supper.
For this traditional Christmas Day treat you will need
1 Hubbard squash
11/2 cup of brown sugar
1 teaspoon of kosher salt- Morton salt works fine as well
1 teaspoon of ground black pepper
1 large Tablespoon of unsalted fresh sweet butter
Cut the squash into one inch size cubes and cook the squash in a cast iron kettle in as little water as possible. When the squash gets entirely tender drain off your squash any surplus of water and season it with the brown sugar, , salt and pepper and rubb with the big wooden spoon 1 large tablespoon of unsalted fresh butter. It can be beaten smooth in the blender as well- will get it easier. You may add some heavy warm cream if preferred or some warm milk if preferred. Makes a nice Christmas meal.
