Chopped Cabbage
1 medium head of the white cabbage
1/2 spoonful of kosher salt
1/2 spoonful of ground black pepper
1 cup of white cider vinegar diluted
2 Tablespoons of sugar
1/2 cup of whipping cream or whipped cream
1/2 cup of chopped celery
Select a nice white head of cabbage and soak for three hours in the cold salted water. After this shred the cabbage very fine with the sharpest knife to the finest dust. Add the finely chopped celery if you wish. Put the cabbage into a dish and add the spices- a little pinch of salt and the black ground pepper. Pour the dressing over the salad, made from 1 cup vinegar, 2 tablespoons of white granulated sugar and 1/2 cup of heavy whipping cream or whipped cream. This is the tradtional cabbage salad served in Lithuania since 1909- Lithuanians love to add two or three tablespoons of virgin oil intothis salad, but this salad is traditionally very good when served only with vinegar and whipping cream.
