Corn Oysters
2 eggs
1 can of corn flour
1 Tablespoon of butter
1 teaspoon of baking powder- we use Calumet, but Glabber Girl is working fine as well
1/ 2 cup of the white granulated sugar
1/2 teaspoon of kosher salt
1/2 cup of all purpose wheat flour
Beat 2 chilled eggs with a pinch of salt.Sift a can of corn flower with a teaspoonful of baking powder, salt and sugar and with a half cupful of all purpose wheat flour. Sift the flour 3-4 times to get the doughairy. then add the beaten eggs into the dough and soften the dough with a table spoonful of melted butter. Mix all together and dip the oyster into this batter and fry in butter on a very hot griddle.
This is the favorite recipe of the seafod of my grandmother Mrs CH Nelson Garner Iowa- for the family barbeque.
