Corn Bread
This recipe was sent to us by our grandmother from New England- she was baking this bread for the New Year's Eve for many years- as all the AfroAmerican grandmothers.
For this festive bread you will need:
11/2 cup of fresh sweet unsalted butter
11/2 cup of white granulated sugar
1 cup of corn meal
2 cups of white wheat all purpose flour
1 cup of fresh sweet milk
2 eggs
3 teaspoons of baking powder- Calumet or Glabber Girl baking powder is preferred by our family for many years
1/ 4 teaspoon of kosher salt
Sift the baking powder with the half of the sugar, the salt and the flour for three to four times. The more times you sift the flour-the lighter your bread will be. Beat the cold eggs with the half of the sugar and a pinch of salt. Add the warm milk and the melted butter into the flour and then slowly fold in the beaten eggs. Pour the dough into the well greased gem pans. Bake in the medium hot oven for 1 hour and 15 minutes- depends on your own oven.
