Oatmeal Drop Cookies

 Oatmeal Drop Cookies 

Traditional New England festive cookies of the New Year's Eve. This is the recipe of our puritan great grandmother, which survived the hundred of years.

For this traditional British oatmeal cookies you will need

1 cup of white granulated sugar

3 /4 cup of shortening- we use Cricso shortening for many years

1 cup of boiling water 

1 teaspoonful of bakig soda- Calumet or Glabber Girl baking powder work fine as well

2 Tablespoonfuls of  molasses 

2 cups of white all purpose wheat  flour 

2 cups of rolled oats

1 cup of seedless raisins- we prefer Sultana raisins

1 cup of ground nut meats

1/2 teaspoon of vanilla extract

Sift your flour with the baking powder and add into it the ground nuts and soaked raisns. Soak the raisins in cold water the night before, dredge the raisins in a spoonful of the cornstarch and add to the flour.  If you use the baking soda for the dough- dissolve the baking soda in a cup of a hot water and add it to the flour- scald your dough. Add to the dough the soaked rolled oats and molasses. You may add vanilla into the dough if prefer. Put the wax paper into your baking pan and drop the dough with a spoon into the pan. Bake in the slow owen for 10-15 minutes. These cookies are always dropped into the baking pan with a spoonful.
