Cream Mayonnaise Dressing
1 egg
2 Tablespoons of lemon juice- lime juice will do fine as well
2 Tablespoons of fresh unsalted sweet butter
11/2 teaspoon of kosher salt
1/2 Tablespoon of white granulated sugar
1/4 cup of fresh sweet heavy cream
Beat the egg lightly with the beater in a bowl and while beating, add add the lemon juice in drops slowly. Gradually ad a pinch of salt, sugar and melted butter. Place the bowl into water bath on the stove and cook in a double boiler on a very slow fire until it begins to thicken. Remove the sauce from the fire and chill down. Add the heavy whipping cream into your mayonnaise, and for this use the cream whipper to whip your sauce into a delicious creamy dressing. This mayonnaise is especially good with a fresh fruit salad, and is so good that many people serve it as both salad and dessert.
