FINE MARASCHINO ICE - CLASSICS OF THE AMERICAN PHARMACIES
The Classic Grand Americana recipe. The popular American ice-cream and family dessert was sold in all the pharmacies of the United States of America in 1918 around Easter. The original recipe of the New England, Boston, and New York pharmacies. The sundae was sold in the pharmacies for 15 cents of 12 ounces serving glass.
For this original American classic ice-cream- slowly churned egg- sundae dessert of the beginning of the last century you will need:
12 eggs
1 ounces of finely chopped marschino cherries
1 pound of the white powdered sugar
2 quarts of sweet heavy cream
1/2 pint of maraschino di Zara cherries
1/2 teaspoon of kosher salt
Chill the eggs well. Crack your eggs and beat the whites of your fresh dozen eggs with the half of teaspoon of kosher salt very stiff. Add to this batter 1pound powdered sugar then slowly pour into the batter 2 quarts of sweet heavy cream. All this batter is placed into the large farina boiler and is heaten until it becomes boiling hot. Remove the dessert from the fire, strain and then beat gently a little again. Let it cool down and freeze. When your ice-cream is well frozen, add to this sundae 1/2 pint of maraschino Zara cherries and beat in the berries well. Then re-ice your ice-cream and let it ripen for 1 hour. After one hour in the freezer your ice-cream is ready to serve.
