FRUIT TABLETS
The Classic Grand Americana recipe. The popular sugar candy sold in all the pharmacies of the United States of America in 1908. The original recipe.
For this original American candy of the beginning of the last century you will need:
20 pounds of white granulated sugar(Confectionary grade A)
1 level teaspoonful of cream- of- tartar
2 quarts of cold fresh water
6 ounces of citric acid powdered
12 ounce of culinary grade lemon oil
You begin to make your candy with putting the sugar, the cream-of-tartar and the water into your cast iron kettle, put it over the fire and cook up to 335 degrees Fahrenheit. Pour out the candymass onto the well greased marble slab when your caramel is formed and mix into your caramel the flavor and the citric acid. When your candy cools down and gets stiff enough to handle by the hand, put it on the table by batch and run out through a "drop" machine- make the dragee. The following traditional flavors of these dragees can be made by above recipe by using their respective flavors and colorings:
Strawberry candy tablet- red color
Orange candy tablet- orange color
Lime candy tablet- green color
