Grape Juice for Drinking

 Grape Juice for Drinking

This is the old AfroAmerican way of canning the grape juice- was popular in the state of Mississippi long before WW2- circa 1900.

Citing below the description of how it was left to the great great grand children by our great grandmothers.

Pick over the ripe grapes( best are Concordia black grapes)  and wash them and  put them on to the stove in a big pot to simmer entirely covered with water.

When the seeds of grapes are separated from the pulp, strain out the juice through the cheesecloth. Put he juice back on stove and bring again to a boil, dropping in a pinch of baking soda which will bring up a green scum  to be removed. This baking soda guarantees no grape sugar forming in the bottom of your jars. Then sweeten the juice to taste and boil it down about one third its depth can as usual. This can be diluted with ice water when opened.
