Green Pea Souffle

 Green Pea Souffle 

1 lb of dry green peas

1 cup of sweet fresh milk

1 Tablespoon of all purpose white flour

1 Tablespoon of sweet unsalted fresh butter

1 cup of bread crumbs

Soak the peas over the night in the cold water. In the morning cook the peas - proportion- peas and water  1:3. When the peas are about almost done have ready a sauce made as follows. In a deep cast iron skillet a skillet put a big tablespoon of  unsalted butter, let it  melt fully and slowly stir into it  a tablespoon of flour, when the flour starts to thicken, slowly add into this skillet one cup of milk and let the sauce come to boil. Put your peas into the baking pan, pour the sauce over the peas and sprinkle the top of the souffle  with the  bread crumbs generously and let bake a few minutes - up to 20 minutes- depends on how you like your peas.
