MAPLE CRYSTAL DRESSING -CLASSICS OF THE AMERICAN PHARMACIES
The Classic Grand Americana recipe. The popular American ice-cream and family dessert topping was made in all the pharmacies of the United States of America in 1918 all year. The original recipe of the New England, Boston, and New York pharmacies.
For this original American classic ice-cream- sundae dessert topping of the beginning of the last century you will need:
1 comb of honey
1pint of simple syrup
2 pints of maple syrup
MAPLE CRYSTAL DRESSING
For this type of dessert topping and dessert sauce, you put into your enamel porcelain lined kettle one comb of honey, which you should nicely cut into cubes and melt it with 1 pint of simple syrup and 2 pints of the good quality maple syrup. Bring the fire on and slowly stir the honey until it melts. Another method that works with the tough honey, is to dissolve the honey into the simple syrup by the bringing to the heat and when it cools down, skim off the wax which settles on the top. Only when you take off the wax from the top of the sugar, only then you should add the maple syrup. Otherwise the wax will settle above your maple syrup topping. This dressing may be thinned with a little water if it gets too heavy for your personal needs.
Remember- you may melt the honey comb in a simple syrup and skim off the wax from the cool syrup. If you melt your honey comb directly into the maple syrup= your dressing will be ruined- maple syrup is too expensive to be ruined by the wax.
