For this original American classic ice-cream- sundae dessert topping of the beginning of the last century you will need:
3 pints of sweet heavy cream
1 pound of granulated Maple sugar
1 pound of chopped pecan nut meats
5 heaping teaspoons of marshmallow whip
MAPLE CREAM PECAN DRESSING
For this type of dessert topping and dessert sauce, you put into your enamel porcelain lined kettle three pints of sweet heavy cream and let 1 pound of Maple granulated sugar melt in this cream slowly. Bring the fire on and slowly add to the cream the finely chopped pecan nut meats and bring the cream almost to the boil, while stirring vigorously-as it sticks to the bottom and burns easily. When your cream starts making first bubbles, turn the fire off and to your cream five heaping spoonfuls of marshmallow whip, and turn the fire off. Do not allow this topping to actually boil or you may cause the cream to curdle.
