For this original American classic ice-cream- sundae dessert topping of the beginning of the last century you will need:
5 pounds of granulated maple sugar
2 pounds of white granulated sugar
4 pints of cold filtered water
6 drams fluid ounce of vanilla extract

For this type of dessert topping and dessert sauce, you take 5 pounds of the granulated maple sugar, and put it into the cast iron kettle with two pounds of white granulated sugar. Pour into the kettle four pints of cold filtered water. Bring your syrup to the boiling point on the slow fire. To elevate the taste of the syrup add to the mixture 6 drams of the fluid ounce of the vanilla extract. Then turn the fire off and keep the sauce warm. To keep it working you add to the syrup equally enough of the maple syrup colored with the caramel extract- to make it look nicer.
