Meat Loaf
1 teaspoonful of kosher salt
1 teaspoonful of ground black pepper
1/4 cup of heavy cream or sour cream
3 lbs of lean beef
1/2 lb of fresh fat pork
3 eggs well beaten
11/2 cup cracker crumbs rolled fine - or 1/2 of white bread soaked in the milk
1 white onion
Put the meat through the grinder or the chopper and add to it the Graham cracker crumbs or the white bread soaked in the milk for half an hour. Add to the minced meat the salt, the pepper and the heavy or the sour cream; then mix in the well the beaten eggs and finely chopped onion. Mix well and and form a loaf. Wrap in oiled paper and place into the pan. If like- put into the meat one hard boiled egg as into the cake and cover with the meat dough. Bake the meatloaf for 1 hour uncovered, if covered baking time can take up to 2 hours. This is the most popular meatloaf recipe in the state of Iowa.
