Mock Angel Food Cake

 Mock Angel Food Cake 

 11/3 cups of all purpose flour 

1 cup of white granulated  sugar 

1 Pinch of kosher salt or to taste

3 teaspoons of baking powder  - we use Calumet,  but Glabber Girl works fine as well

1 cup of sweet fresh milk

2 eggs

Mix all ingredients and sift 4 times through the sifter.

Scald 1 cup  of sweet milk and pour over the sifted flour into the mixing bowl. Then fold in lightly the stiffly beaten whites of 2 eggs. Keep your eggs chilled in the fridge before beating them, add a pinch of salt to the white of eggs while beating them to the stiff.  Add any desired flavor extract into the dough and pour the dough slowly into pan that has not been greased. Bake the cake in a very  slow heat oven and frost after it is done.
