Fruit and Nut Salad
One cup of chopped celery
One cup of chopped apples
One cup of chopped English walnuts
1 pinch of kosher salt or up to taste
Take one cup of finely chopped celery, one cup of grated red semi sweet or sweet apples and one cup of ground English walnuts and mix together in a serving bowl. This salad is served with this cooked dressing:
Boiled dressing
1 11/2 teaspoon (level)kosher salt
1 teaspoon (level) mustard powder
11/2 Tablespoons of white granulated sugar
2 Tablespoons of all purpose flour
11/2 Tablespoons of sweet unsalted melted butter
1 pinch of cayenne pepper
Yolks of two eggs
3/4 cup of sweet fresh milk
1/4 cup vinegar
Mix the dry ingredients- salt, mustard powder, sugar, flour, and pepper in a bowl and add into it the melted butter, egg yolks and fresh milk. Put it on a stove into a double water boiler and heat it on the slow fire. Heat the vinegar separately and pour into the milk sauce. slowly stirring all the time. Cook over water until your sauce mixture thickens then strain through the colander or the cheesecloth and cool it down. Serve over your fruit and nut salad.
