Asparagus on Toast

 Asparagus on Toast 

1 loaf of white wheat bread

1 stick of unsalted fresh butter

1 cup of sweet fresh milk

2 pounds of asparagus

3 Tablespoons of all purpose flour

3 Tablespoons of rubbed unsalted butter

Make the batch of the toast Melba from your bread,. Have a large plate of crisp buttered toast keeping hot and ready for your asparagus. Butter your toast generously and garnish it with  asparagus which has been cut into inch lengths and cooked until really tender in  the well salted boiling water,water should just cover the vegetables at the sides .  Keep the water in which you have boiled your asparagus and do not drain this water off . The water should be very low when asparagus is done to the soft, then add to this water the milk, sufficient enough to make a good quantity of the white  sauce and thicken with three tablespoons of  sweet unsalted butter rubbed smooth with three tablespoons of white all purpose flour. Cook the sauce until smooth, put the asparagus with the sauce through the sieve and  serve very hot.
