White Sauce
4 tablespoons of all purpose flour
4 tablespoons of fresh unsalted butter
2 cups of fresh sweet milk
1/2 teaspoon of kosher salt
Soften the butter and rub together your butter and flour, while adding gradually the hot milk. Be attentive- the milk should be warmer than lukeworm, but not scalding. Cook this white sauce in a double boiler over the stove on the slow fire for 10 to 15 minutes. Add salt at the end of cooking.
